When unzipped, it will create a new folder called "jes" containing the software for the actual application, a folder of useful images and sounds (the "MediaSources" folder), and a number of other materials. The same file should work under Windows or OS X:
To start JES, double-click on the kJES.exe file within the "jes" folder. (If your system is not configured to show you the .exe extension, the application you want to double-click on is the one with the little icon of a python face.)

You may want to put the Mac version of the application software (kJES.app) in your Applications folder. You can also drag it to the dock, if you want to be able to bring it up more easily in the future.
JES is an open source Jython programming environment that includes a set of built in functions for working with multimedia data.
